I've met a lot of high carb low fat vegans who are just scared of adding HEALTHY fats into their diets. The amount of fat in fruits and vegetables is not enough to meet most people needs. Addition of plant-source fat, helps to absorb vitamin A, D, E and K, it transmits taste all over our taste buds, it helps with synthesis certain hormones (escpecially sex hormones), it protects cardiovascular system by lowering LDL cholesterol and many more! The matter is how much we eat it daily. I always add handful of nuts to my oatmeal and when I cook some sort of vegetable stew I add 1 tbsp of rapeseed oil. I also eat 1 brazilian nut every day, because it meets my selenium need for a whole day. Nutrition Fact: Cashews have the highest amount of iron per 100 g, than other nuts!
